07 - 750ml bottle burgundy wine
08 - 2 cups beef broth if needed

09 - 3 fresh thyme sprigs
10 - 2 bay leaves
11 - Salt and black pepper to taste
12 - 2 tbsp flour (optional, for thickening)

# Instructions:

01 - Cook diced bacon in Dutch oven over medium heat until crispy, about 8 minutes. Remove bacon but leave the fat for browning beef.
02 - Pat beef dry, season with salt and pepper. Brown in batches in bacon fat over medium-high heat, 4-5 minutes per side until deeply caramelized.
03 - Add pearl onions and carrots to pot, cook 5 minutes. Add minced garlic and cook 1 minute until fragrant.
04 - Pour in burgundy wine, scraping up browned bits. Return beef and bacon to pot with thyme and bay leaves.
05 - Bring to simmer, cover and braise in 325°F oven for 2.5 hours, stirring occasionally until beef is fork-tender.
06 - Add quartered mushrooms in last 30 minutes. Remove thyme stems and bay leaves before serving. Adjust seasoning.

01 - Brown the beef in batches for proper caramelization—crowding steams instead of sears.
