05 - 3 lbs Russet potatoes, peeled and 1-inch diced
06 - 1 lb Andouille sausage, sliced 1/2-inch thick
07 - 6 cups low-sodium chicken broth
08 - 1 (14.5 oz) can diced tomatoes, undrained
09 - 2 bay leaves

→ Creamy Cajun Finish & Kick

10 - 1 cup heavy cream
11 - 1 1/2 cups shredded sharp cheddar cheese
12 - 2 tbsp Cajun seasoning
13 - 1 tsp smoked paprika
14 - 1 tsp dried thyme
15 - 1 tsp salt, or to taste
16 - 1/2 tsp black pepper, or to taste
17 - 1/4 cup fresh parsley, chopped, for garnish

# Instructions:

01 - Brown 1 lb Andouille sausage, sliced 1/2-inch thick, in a large skillet over medium-high heat. Remove sausage and set aside. Add 1 large yellow onion, 2 stalks celery, and 1 large green bell pepper to the skillet; sauté until softened, about 5-7 minutes. Stir in 4 cloves garlic and cook for 1 minute more. This builds the flavor base for your Hearty Slow Cooker Cajun Potato Soup.
02 - Transfer the sautéed vegetables and browned Andouille sausage to a 6-quart slow cooker. Add 3 lbs Russet potatoes, peeled and 1-inch diced, 6 cups low-sodium chicken broth, 1 (14.5 oz) can diced tomatoes (undrained), and 2 bay leaves.
03 - Stir in 2 tbsp Cajun seasoning, 1 tsp smoked paprika, 1 tsp dried thyme, 1 tsp salt, and 1/2 tsp black pepper into the slow cooker. Cover and cook on LOW for 6 hours (or HIGH for 3-4 hours), until the potatoes are very tender.
04 - Once the potatoes are tender, carefully remove and discard the 2 bay leaves. For a thicker Hearty Slow Cooker Cajun Potato Soup, mash about one-third of the potatoes directly in the slow cooker using a potato masher or the back of a large spoon.
05 - Gradually stir in 1 cup heavy cream and 1 1/2 cups shredded sharp cheddar cheese until completely melted and well combined. The cheese will add a delightful richness and creamy texture to your Hearty Slow Cooker Cajun Potato Soup.
06 - Taste the soup and adjust salt and black pepper as needed. Ladle the hot soup into bowls. Garnish each serving with 1/4 cup fresh parsley, chopped, for a fresh finish. Serve immediately and enjoy this comforting meal.

# Notes:

01 - Adjust the amount of Cajun seasoning to your preference; for more heat, consider adding a pinch of cayenne pepper along with the other spices.
02 - Leftover Hearty Slow Cooker Cajun Potato Soup can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave.
03 - For an even richer flavor, you can use a combination of chicken broth and vegetable broth.
04 - This hearty soup pairs wonderfully with a side of crusty French bread or warm cornbread for dipping.
