# Instructions:

01 - In a medium bowl, whisk together the 1 (20 oz) can crushed pineapple (undrained), 1/2 cup low-sodium soy sauce, 1/4 cup light brown sugar, 1/4 cup sweet chili sauce, 2 tbsp rice vinegar, 1 tbsp fresh ginger, 2 tsp garlic, and 1 tsp sesame oil. Chop 1 cup yellow onion and 1 cup red bell pepper.
02 - Place the 2 lbs boneless, skinless chicken thighs in the bottom of a 6-quart or larger crockpot. Scatter the chopped 1 cup yellow onion and 1 cup red bell pepper over the chicken. Pour the prepared sauce mixture evenly over everything.
