First things first, get your bread ready. I usually grab two slices and lay them out on a clean cutting board. Take your softened butter and spread a thin, even layer on one side of each slice. This is where the magic starts, that golden crust won't happen without it! Sometimes I get a little messy here, butter ending up on my fingers, but that's just part of the process, isn't it?

Now for my little secret: sprinkle a tiny pinch of garlic powder and a dash of paprika over the buttered sides. Seriously, don't skip this! It adds so much flavor and a beautiful color. I once forgot this step and the grilled cheese was good, but it didn't have that extra "oomph" I love. It’s a subtle touch, but it really makes the crispy air fryer grilled cheese sing.

Flip one slice of bread (butter-side down) onto your board. Layer your cheddar cheese, then your Monterey Jack. I like to make sure the cheese covers most of the bread, but not so much that it oozes out everywhere when it melts. Remember my first cheesy waterfall incident? Yeah, we’re avoiding that! Place the second slice of bread (butter-side up) on top, forming your sandwich.

Preheat your air fryer to 375°F (190°C) for about 3-5 minutes. I find this helps ensure an even cook and that beautiful crispness from the start. While it’s preheating, you might want to lightly spray your air fryer basket with a non-stick spray, just to be safe. Nothing worse than a grilled cheese sticking to the bottom, trust me, I’ve been there.

Carefully place your assembled sandwich into the preheated basket. If you're making more than one, make sure they aren't touching so the air can circulate properly. Cook for 4-6 minutes, then carefully flip the sandwich. The first side should be golden brown and smell absolutely incredible – that's the butter and spices doing their thing!

Continue air frying for another 3-5 minutes, or until the second side is also golden brown and the cheese is gloriously melted and bubbly. You'll hear it sizzle, you'll see the cheese peeking out, and oh, the smell! Once it's done, carefully remove it from the air fryer. I usually let it sit for a minute or two before slicing, because that cheese is lava hot, hon!
